Weekend In The Dells

I hope you all had a wonderful Easter weekend!

My dad’s birthday was on Saturday so we decided to spend the weekend at the Wisconsin Dells. It was a fun and non traditional Easter weekend.

My mom, dad, Scott and I headed to the Dells at about noon on Friday. We had to make a pit stop at Super Target in Eau Claire, Wi! Mom needed some Target wine 🙂 Bummer of MN…. Target can’t sell alcohol. So we stocked up for the weekend in Eau Claire.

Our resort that we stayed at was the Christmas Mountain Village. It isn’t like your normal Wisconsin Dells resort…. no waterpark or crazy attraction. It is set up as a bunch of little cottages. Each cottage is split in half. The nice thing is we had a full kitchen so we could cook meals at home.

When we arrived Scott informed me that he had NO wearable jeans. Apparently the pair that I packed him was missing a button, whoops 🙂 And the pair he was wearing was his work jeans so the knees were huge holes. So…. our first adventure was hitting up the outlet mall. Once he got his jeans we headed to Moose Jaws for some pizza and beer.

I tried the Raspberry Beer and was pleasantly surprised at how good it was. Slightly sweet!!

We started our meal with onion rings!!!! My mom’s weakness 🙂

And ordered Taco Pizza! I had never had a taco pizza with dorritos on it. Not going to lie I would have liked it better without the chips but it was still amazing!

After dinner mom and I poured ourselves a glass of wine and headed out for a quick walk.

When we got back we played one of my favorite card games….. Phase 10.

If you’ve never played you need to! It is very fun…. especially if you are playing with someone super competitive like my dad!

This cake was HUGE and since mom, dad and I were starting our Advocare 24 Day Challenge on Monday we had to finish the cake over the weekend! We enjoyed our first piece Friday night and it was AMAZING! I can’t wait to share this recipe with you guys later this week.

Saturday we started our morning with a nice long walk. That ended with drinks.

The cars weren’t super fast but we still had fun! It had been a long time since I’ve gone go carting.

After our adventure mom and I headed to the hot tub and dad and Scott went golfing. We finally had some nice spring weather so we enjoyed being outside and enjoyed the warmth. It was sunny enough that we actually got a little tan 🙂

Saturday night we had lasagna for my dad’s birthday!!! I have an amazing lasagna recipe, which I will share later this week! It is so easy to make and everyone loves it!

Sunday it rained so we decided to go bowling to pass some of the afternoon. Our Sunday dinner was one of our best meals! You know you are going to get good food when the waitress brings out a meat cart to explain eat of the cuts!

Our meal started with a garbage salad! It had romaine, croutons, black olives, bacon, banana peppers, bacon, shrimp, tomatoes, blue cheese and a parmesan dressing! So yummy!!

Mom and I split the butter chicken entree and we ordered asparagus with hollandaise sauce and loaded mashed potatoes as the sides. You orders sides for the table to share!!

The potato side was HUGE!!!!! An entire entree plate filled with potatoes, cheese, thick cut bacon, sour cream and scallions! The picture above only shows half the potatoes, we ate the other half before I took the picture!

I highly recommend going to Kaminski Bros Chop House if you are ever in the Dells!

It was a weekend full of yummy eats and family fun. Now we are on our Advocare 24 Day Challenge and eating clean healthy food! The challenge was much needed after this weekend of eats.

Honestly it wouldn’t be a treat yourself tuesday without some Advocare love!! I tried this new to me flavor of spark and I am OBSESSED!!!!! If you like lemonade you would LOVE this!!! It tastes identical to regular old lemonade! NOM NOM #advocareobsession

I immediately ordered an canister for the pink lemonade flavor for myself and got my friend, Mellissa to order some also!!!! I can’t wait…. it is supposed to be delivered today!!

Boxing

I treated myself with two intense workouts! The first was boxing. You all know my obsession LOVE for boxing! Al was our instructor last Thursday night and he was on a mission to make us sweat! Thank goodness…. my goal for that class was to burn more then 800 calories!

Back at the end of March I went to the Lulu Lemon Warehouse sale at the Minneapolis Convention center! OMG what a fun experience. They had great prices and for this first time lulu buyer I was in heaven! I now see what so many people spend the money for lulu…. their clothing quality is amazing! I got 3 pairs of capris, 1 long sleeve shirt, 1 short sleeve shirt, 2 tanks and a hoodie! I saved like 60% and it was amazing!!!

Who says you don’t burn calories in yoga?? I have always LOVED Core Power Yoga but I really love Sculpt with Lee! She does an amazing job at pushing you to do your best and I love her music selections!! If you haven’t checked out her blog yet you really need to! She posts the most amazing recipes ever! And her food photography is amazing! I hope to be as good as her someday 🙂

After sculpt yesterday I was starving and wanted to throw something quick and easy together for lunch! I found tomato basil tortillas, turkey, cheese, pesto, greek yogurt french onion dip, jalapeños, banana peppers, artichokes, olives and kale! Put it all in the wrap and roll it up and it equals amazingness!!!! I love wraps and I’m always looking for new fun things to roll up!

We finally had some warm weather last week so that meant a walk date with my blend Amanda!! It was so amazing to be outside enjoying the warmth! After my walk with Amanda I ended up going with my mom and the dogs zoey and maisy for another walk!

Oh how I LOVE target!!!! I went to target yesterday for a couple pillows and walked out with pillows and a new purse! I love the mint green obsession this spring! It is a great and happy color!

Boxing

I know I have shared my love of Title Boxing on here before but I just had to mention it again! Their classes are amazing and I love it so much!! I feel so amazing after and I know they are helping me with my weight loss journey!

Post Workout Protein Shake

Oh how I LOVE post workout protein shakes!!! To be honest I love protein shakes any time of the day but they are always extra refreshing after a workout! So simple to make too!!!

For this shake I combined 1 scoop white chocolate designer whey protein powder, 2 tbsp natural peanut butter, 1 frozen banana and about 8 ounces cold water. I blend it all up and ENJOY!!

Bacon Chase 5K

I found out about this amazing 5K at work and had to sign up! Who wouldn’t want bacon and a bloody mary at the end of a 5K!!! I’m so excited for this race! It is on July 19th so if anyone is in the Twin Cities area you should sign up and run with me!!! Let me know if you sign up!!

I realize it has been a week since I last posted. This week has been busy. Last week I worked 63 hours in 6 days! I know insane… I was in between going casual at the hospital and starting at my new home care job. This weak shouldn’t be as busy. I did manage to treat myself a couple times during my busy week!

Boxing

For Christmas I got a groupon from my parents for one month of unlimited boxing classes at Title Boxing. Both my parents and I fell in love with the classes and decided to sign up on a family plan! I got a free pair of gloves! Boxing is such an amazing workout. It is a high intensity sweat fest 🙂

Advocare Friendly Food

I am still doing my Advocare 24 Day Challenge. I will admit it has been very hard to eat 100% clean but I’ve been doing pretty good about sticking to the clean eating. I found the time to make two yummy recipes last week.

Turkey Meatloaf Muffins

I simply mixed 1 package ground turkey, 1 egg, 1/4 cup oats, half an onion copped, 1/2 red pepper chopped, 1 jalapeño chopped. I baked the meatloaf muffins in a muffin tin at 350 degrees for about 20 minutes. These babies were packed with flavor and so delicious. I will definitely be making them again. I made some beef meatloaf muffins for Scott and he told me he loved them!

Lemon Pasta Salad

I combined 1 package cooked brown rice noodles, diced baked chicken thighs, 1 can rinsed chickpeas, 1/2 cup chopped black olives, 1/2 cup chopped banana peppers, 1 jalapeño chopped, 1/2 red pepper chopped, 1/2 onion chopped, 1 head of broccoli chopped and one jar of Simply Lemon salad dressing (found in the fridge section).

Both recipes turned out amazing!!!

More Spark

I made the mistake of making Scott try my Spark and he of course LOVES it! I had to order more spark! I ordered cherry and grape and can’t wait to try them. I’m trying to decide which flavor is my favorite so I can order a tub.

Advocare Mocha Shake

If I needed to I could totally live on liquids. I’d rather drink a meal in the morning. These mocha meal replacement shakes are so good! I simply mix water, 1 frozen banana and the powder packet…. blend it up and enjoy 🙂 I’m going to buy more of these because I love them that much!

Healthy Crackers

I’m not 100% sure if these are Advocare friendly so I waited until the Max phase to buy them. The good news is I looked at the ingredient list and I recognize everything that was listed. I think they are almost Advocare friendly. I eat them with hummus, which is Advocare friendly!! I never really loved hummus but these crackers make me love hummus!!

Low Key Weekend

Scott and I had ZERO plans for this past weekend and it was amazing! We (and by we I mean I) got some cleaning done. Scott helped with laundry! We hung out with Scott’s brother, sister in law, niece and nephew. We watched movies. Yay for no plans on the weekend.

Mung Bean Noodles

YAY for some healthy noodles! These noodles are made 100% of mung beans which means there is no flour! They are gluten free but they taste like regular old noodles! I bought them on Amazon and I am so happy I did. I’m making them again today for lunch. I’m going to add olive oil, seasoning and shrimp to the noodles to make a super easy healthy pasta.

Snuggle Time with The Pup

What a little snuggle bug. She weighs about 45-50lbs but she thinks she is a lap dog. If I’m on the couch she is almost always laying on top of me.

So far I have loved the Tangerine and Fruit Punch flavored spark drinks. I ordered more and I can’t wait to try the Mango Strawberry flavor later today!! Love my spark!!!

Well these are a few treats from the past week. The rest of my week will be spent working, cleaning, cooking and working out!
