Elf4Health Challenge 12/8/13

So far I have been loving the Elf 4 Health challenge! I have met so many amazing and supportive people.

Todays challenge is to write a list of 20 things we are grateful for.

20 Things I’m Grateful For

3. Friends

Friends are so important to me and I truly cherish all of my friends.

Since I started this blog I have virtually met so many amazing people. I haven’t met any of these people in person but through their blogs I have learned so much about them.

7. Cooking

I really love to cook and I know it might be weird to be grateful for it but it is such a good stress reliever. I love trying new recipes!

It really is an amazing workout. I have seen some of the fittest people come to skyrobics and they can barely make it through the class.

I really love taking care of kids and making a difference in peoples lives.

I’m actually graduating this month!

13. My Healthy Body

During my spin class the instructor always asks us to give thanks for our healthy bodies. It truly is a blessing to be able to do what I want to. There are many people out there who have health issues that prevent them from living their lives the way they want to.

14. Music

I am super motivated by music. If I’m doing a hard workout I just need a few great songs and I will get through it.

15. Happy Days

I am rarely in a bad mood and that is because life is WAY TO SHORT to live it pissed off. I almost always have a smile on my face and I love to make the best of every situation.

16. Snow

Although I don’t love the cold I really enjoy the snow.

17. TV Shows

Kind of weird to be grateful for but watching my shows is a great way to relax after a stressful or busy day.

18. Books

I really love reading… I haven’t had a ton of time for this while in school but during the summer I read a ton! I can’t wait to finish my current book and move on to a new one.

19. Photography

I really love photography. This is another thing I haven’t had a ton of time to do but I can’t wait to learn more about photography now that school is over and I will have more time.

I have really enjoyed Elf4Health so far. I have met many amazing people who are always supportive.

Hanging With Samantha

I’m up at my Aunt’s house hanging out with Samantha. Her usual day care lady has been on vacation so I’m helping out when I can.

Last week we went to the zoo for a day and that was super fun. This week I’ve been hanging out with Samantha for the past couple days, thursday and friday.

Thursday we got up and Samantha helped me make breakfast. She loves turkey bacon so I let her make that and I made some scrambled eggs for myself.



I made the scrambled eggs with three cheese egg beaters. I had never had them before but they were good!!

After breakfast we headed to the grocery store to pick up the ingredients to make the yummy chia peanut butter power bars.



They are so easy to make and I knew my Aunt would love them.



Here is the recipe from Katie’s blog.

1 3/4 cup rolled oats
1/2 cup raisins or chocolate chips
1/2 cup maple syrup
1 1/2 T chia seeds
1/2 cup creamy peanut butter

Add all ingredients to a large mixing bowl.
Fold well until all the oats are soaked in nut butter and maple syrup.
Pour into a dish.
I used a 9Ă—9 pan, the smaller the pan, the thicker the bars will be.
Chill in fridge until firm enough to slice.
Slice into squares and wrap in plastic wrap.

I also added craisins to the bars. They turned out so good. I brought them along for Ragnar also. Everyone in the van loved the bars. They are a great snack and anergy booster.

After making the bars we headed outside to swim in the pool for a while before lunch. The rest of the afternoon we hung out inside. It was a hot one outside.

Once Vicki got home we headed out for a quick run. When we got home it was time to make some homemade pizza!!!!! I love the trader joe’s pizza crust and pizza sauce so I stopped there before heading to Vicki and Bills house. I made a boring half cheese half sausage/green olive pizza for Samantha and Bill. Vicki and I made ourself a delicious pizza filled with onion, peppers, sausage, green olives, banana peppers, mushrooms and tomatoes. It was so good!!! Everyone loves the pizza.



After pizza, I got my hair dyed and then we headed to bed.

Today Samantha and I are just hanging out and relaxing.

The half marathon is tomorrow morning and I am definitely nervous. I’m not as ready as I would like to be. My goal is just to finish.

After the half marathon Scott, my parent’s and I are heading to Scott’s mom’s cabin for the weekend. I’m excited…. no updates until monday though. No internet there 🙂
