Healthy Potato Soup

Great news for you all….. if you love potato soup I have a delicious healthy recipe for you!!!

I have a serious love for potato soup…. so I needed to come up with a healthy version of this delicious soup.

Healthy Potato Soup

2 Cauliflower heads (chopped)

10 small red potatoes (cubed)

1 pkg turkey bacon

1 box reduced sodium chicken stock

4 carrots (peeled & sliced)

3 stalks celery (diced)

1 red onion (diced)

2 tbsp garlic (minced)

1 tbsp olive oil

1 cup unsweetened almond milk

Place the chopped up cauliflower and potatoes into a crockpot (You don’t have to peel the potatoes). In a frying pan on medium heat saute the carrots, celery, onion, garlic and olive oil for about 5 minutes until slightly softened.

Place the veggies into the crockpot with the cauliflower and potatoes. Dump in chicken stock until just covered, I used 1 box.

Cover and cook on high for 3-4 hours or low for 6-8 hours. Once the potatoes are cooked through take out the emersion blender and blend until smooth. If you don’t have an emersion blended you can use a regular blender. Pour in the almond milk and mix together.

On the stove fry the turkey bacon over medium high heat. I actually used venison bacon because I had it but I realize that not everyone has venison bacon laying around so turkey bacon works just as good. Dice up the bacon and add to soup. If you have time let cook longer so flavors will blend together but if you can’t wait you can eat it right away!

I like to top my soup with a little reduced fat colby jack shredded cheese.

I hope you guys enjoy this amazing recipe! It is Scott approved for those of you who have a hubby who doesn’t like super healthy food.

EnergyBits Review/Giveaway

Today is a very special day…. my first giveaway!!

I first learned about EnergyBits from other bloggers who have tried and loved them!

Last week I was contacted to do a product review and giveaway and I jumped at the chance to see why everyone was loving these Bits.

A little background about the company:

ENERGYbits is a new Boston based sports nutrition company. Our “bits” are rapidly becoming the fuel of choice for athletes and people looking to lead active lifestyles. ENERGYbits have the highest concentration of protein in the world and deliver a steady stream of energy, all naturally and all without sugar, caffeine, chemicals or stomach distress. Even better, ENERGYbits are the only protein in the world that also contain natural antioxidants and Omega 3 which reduce muscle inflammation, iron which prevents fatigue, chlorophyll which builds the immune system and electrolytes which replenish mineral imbalances, all for just one calorie per tab. No other protein offers all this.

ENERGYbits are all natural too, because they are a food, not a supplement. They have just one ingredient – 100% organically grown spirulina algae. Algae has been used by Olympic athletes for over 50 years, but is still virtually unknown in the USA and Canada. We are the first company to bring algae to national attention as a high protein, high performance snack food for athletes and active consumers.

Nutritional Comparison Chart

The unique thing about EnergyBits is they are made out of one simple thing… Algea.

Unlike many other supplements that we take before and after a workout, algae is a FOOD and is grown not created and mixed together in a laboratory.  It is grown a lot like other vegetables in water, then harvested, dried, and packaged much like dried fruit.  Unlike dried fruit however it has NO sugar/fructose and NO chemicals.

Although the serving is 30 tabs I found that I only needed to take 10 to feel energized. I have problems swallowing pills…. but I found these very easy to take. I even took 4 at a time 🙂 This past week I have been sick with a cold and thankfully I had my bits to get me through last week. I have a serious problem with the 3pm feeling tired… the bits worked wonders to get me through that 3pm feeling.

“ENERGYbits are only available at, and Jonathan (their Brand Manager) has shared with me that he’d be happy to connect anyone with a current ambassador to share a discount on a bag of bits – you can email him at

Now for the fun part….. 1 U.S reader will get the chance to win a sample of EnergyBits!!
