Belated Weekend Update 12/15/13

Sorry I have been MIA for the past few days!

This weekend from Friday to Tuesday I had a Kaplan course to prepare me to take the NCLEX. Who knew you had to take a class to learn how to take a test. I will say their method works so I’m glad my school made me take the class.

Anyways…. I did do a couple fun things besides sit in school all day!

Friday after class my nursing friend Sarah and I headed to Bulldog Lowertown for some yummy food and drinks.


What Came First? Sandwich!! So GOOD!


Saturday after class I made cookies. I made classic oreo balls for a cookie exchange and then I made some healthy Thumbprint Cookies!


I found the recipe for the thumbprint cookies from Lee over at Fit Foodie Finds. By making this recipe I got introduced to Designer Whey Protein powder and not going to lie I kind of love it! I mixed the white chocolate protein powder with almond milk yesterday and drank it after my workout! New favorite protein powder!

Sunday after class I headed to a cookie exchange. This exchange was extra fun because it was at a bar! Beer and cookies!! YUMMY

I really enjoyed doing a cookie exchange, then you go home with lots of different types of cookies instead of being stuck with a whole bunch of 1 kind of cookie! I will definitely be doing this next year.

Monday morning before class I got in a swim!


There really is no workout like swimming! I can tell I burned a ton of calories swimming because I was so hungry all day. My goal is to try and swim at least once a week!

This is my last 5 days in a nutshell! I can’t believe that Christmas is a week from today! So much to do before then 🙂

New Workout Bag:


This is the Everything Fits Bag from Gaiam. My bag came yesterday and I got to use it today and so far I am loving it! Everything really does fit.



I don’t really love the cold but I do love the snow. And my furry friend really loves the snow!

The End of Nursing School:

Thursday night I took my final nursing test of my Associate Program! This girl is officially graduating with a RN degree.

I really was blessed this semester to have an amazing clinical group. We all got along so well and I think we will all stay friends for a long time.

Operation Beautiful:

Todays challenge for #elf4health was Operation Beautiful. I honestly hadn’t heard of operation beautiful before this challenge. Their goal is to spread to teenage girls that they are beautiful just the way they are. It really is the little things, like a note on the mirror or randomly placed at Target, that make a difference.

Spin Class:

I truly love the Road Rage spin class at Xperience Fitness. The instructor, Stacey, is so amazing! She is so inspirational and really pushes us. During the class she always has us take a moment to be thankful for our healthy bodies. She sometimes has us dedicate our ride to someone who can’t be there. I love every minute of her class.

Obsessed With Cooked Carrots!

Before I get to the main reason for this post…. a little about this week 🙂

Tuesday was a very exciting day because:

 1. I saw a C-Section during my labor and delivery clinical


 2. It was my LAST clinical of nursing school!!!!!

Today I got to experience a really cool simulation at the St. Paul Campus. They have a mannequin that can simulate birth. The mom mannequin actually breathes, have a heart rate, pulse the works! And we actually watched the mom mannequin give birth to a baby mannequin. The baby mannequin cries, turns blue, has a heart rate, lung sounds (crackles), grunts and much more! So very cool!!! I’m so happy I got to experience this simulation. The nurse midwife that did the sim with us was so knowledgable. It was only me and one other student so we really had a personalized experience. I learned so much!

Lastly, before I get to the topic of carrots I have to share about my crazy pup Maisy!!

We got a bunch of snow in the last couple days and Maisy is LOVING it.


She literally buries her head in the snow!


She really loves when I kick the snow in the air. She goes crazy and runs around like a maniac.

Now….. for the main topic…. CARROTS

Do any of you have an insane love for a certain veggie? Mine is carrots. I can eat them all the time. Raw or cooked I love them!

Tonight I cooked a pork tenderloin, roasted potatoes and roasted carrots.


I personally think the best part of the meal was the carrots!

Spiced Cooked Carrots


3 cups Carrots

1/2 tbsp cinnamon

1 tsp ground ginger

1/4 cup orange juice

1 tbsp honey


Put all of the above ingredients into a shallow baking dish. Mix together and bake at 350 degrees for 45 minutes! Cook longer if you don’t like your veggies still with a bite.
