Weekend Update 1/5/14

My weekend started out with a YUMMY recipe that I whipped together thursday night!

I had a chuck roast thawed out in the refrigerator so I put it in the crockpot with diced potatoes, baby carrots, 1 cup water, 1 tbsp onion powder, 1 tbsp steak sauce and 1 tbsp garlic powder. I put it on low and let it cook all night. In the morning I took out the meat. Cut off the bone and fat, diced the meat (it mostly just falls apart) and put it back into the crockpot. I added 1/2 cup sour cream, 1 bag frozen peas, mixed it all together so the peas thawed and chowed down! It was super good. I was surprised how good it turned out because we didn’t have much for food and I just whipped it together and hoped for the best.

Friday morning I woke up and headed to BodyAttack at the gym. Last week I ended up trying BodyAttack because my spin class I usually go to was full 😦 It ended up being a good thing…. I really love BodyAttack. It is a high energy, fast paced class. There was lots of jumping and running around.

I also got to try out my new Custom Reebok Nanos and I LOVE them so far 🙂

The rest of friday was spent working.

Saturday I woke up and headed to the gym for an intense morning of Les Mills classes. Xperience Fitness was having a big workout session to celebrate the new Les Mills release.

We didn’t go to the RPM class because we wanted to take BodyPump. We stayed until 10:50. It was very intense and super fun.

It was super fast paced so I didn’t get a chance to take photos. They had a drawing after each class. I won a workout tank top.

Saturday after working out I lounged on the couch watching Big Bang Theory until I headed to work. I did make a yummy post workout pasta 🙂

I measured out exactly 2 oz dry noodles and cooked them according to the package directions. In a separate pan I cooked shrimp, marinated artichokes, green olives, sun dried tomatoes, red pepper flakes and coconut oil. When the noodles were done I added them to the shrimp mixture. Tossed it together and added parmesan cheese on top! SOOOO good!!

Sunday I woke up and headed to SkyZone for SkyRobics. It was a fun and intense class.

After SkyRobics another delicious meal…… Sweet Potato Nachos.

I thinly sliced 1 sweet potato and put it into a bowl with cold water. I let them sit for about 20 minutes. Drain and dry them. I covered them with 1 tbsp olive oil, 1 tsp seasoning salt, 1 tsp garlic powder and 1 tsp chili powder and layer them on a baking sheet. Bake at 400 for 7 minutes. Flip the chips and bake for another 3 minutes. Some of them did burn and I just tossed them out. I covered my chips with ground beef (seasoned with chili powder, cayenne pepper and paprika), shredded cheese, cilantro sour cream, salsa and taco sauce. It was AMAZING!!!!!!

For having little food in the cupboard and fridge this lunch turned out super good. I would have added black beans, onions, lettuce and tomato  if I had any 🙂

Now I’m just watching some more Big Bang Theory (seriously I’m OBSESSED) and then I’m headed off to work.

Weekend Recap 9/9/13

My weekend started on Friday.

Friday morning I headed over to Scott’s dad’s (Don’s) house to check out the tomato plants. I have 6 roma tomato plants in his garden that I bought and he helped me keep them alive over the summer. In the past I haven’t really had much of a green thumb 🙂 With the help of Don I have successfully kept all 6 plants alive!!! YAY!!!

When I went over there I didn’t expect to be leaving with tomatoes. I knew mine wouldn’t quite be ready yet but Don has TONS of tomato plants and he had lots of ripe tomatoes so I went home with a box full.

I got such a great variety of tomatoes. I went out and loaded myself up with canning supplies and got to work. Canning tomatoes really is a huge production and takes a ton of time. I only had this one little box of tomatoes and it took all morning/afternoon to do. First on the list to do is wash the jars.

While the jars were in the dishwasher I got started on the tomatoes. Before cooking the sauce you have to put the tomatoes through a grinder to get rid of all of the seeds and skin.

It was a LONG process to grind all the tomatoes but it is very worth it. The sauce turned out so much better. Once all the tomatoes are done you put them in a pot and let them boil for a long time until it is the consistency that you want. I let mine boil until it was reduced by almost half.

It boiled for a couple hours to go from full to almost half. Once it was done I added the sauce to the jars. I used pint jars and filled 6 of them. It is crazy the amount of tomatoes you use and it only fills 6 jars. Good thing I have MANY MANY more tomatoes to soon jar.

Once the jars were filled I put them on the stove to boil. The joy of canning tomatoes is you don’t have to pressure cook them!  You just boil the jars for 30-40 minutes depending on the size of the jar.

I have more plans of canning in the future once my tomatoes are ripe so you will see lots more soon….. I’m planning to do spaghetti sauce and pizza sauce!!

Once the canning was done I headed with my parents up to Vicki and Bill’s (my aunt and uncles) for dinner. When we left I left with the lovely present of a MILLION mosquito bites. Besides that it was a great evening.

Saturday and Sunday were not very eventful. I had orientation for school both saturday and sunday 8am-2pm. Both days were very long at school so we just lounged around and watched movies. I did cook my AMAZING Pasta with Vodka Sauce. It is so delicious and not healthy at all.

We had pasta, caesar salad and garlic cheese bread. It was a great dinner.

I used one of Pioneer Woman’s recipes as inspiration but made it my own.

Ingredients

1 tbsp olive oil

1 chopped onion

1 tbsp minced garlic

1 lb ground beef

1 cup vodka

6oz tomato paste

15oz tomato sauce

1 cup cream

1 pkg pasta

To make the amazing sauce heat a large skillet over medium heat. Also start a pot of water for the pasta. Once it is boiling cook the pasta as directed to on the box. Add the olive oil to the skillet. Once the oil is hot add the onion. Cook for about 5 minutes until the onion is cooked. Then add the garlic and ground beef. Cook until the ground beef is cooked through. Then add the vodka. Let the vodka boil until it has reduced by about half. Once the vodka has reduced add the tomato paste. Stir carefully, it spills over the edge easily. Once it is combined add the tomato sauce. Once again stir carefully until everything is combined. Let the sauce cook for about 5 minutes. Then turn the heat down to low and add the cream. Once the pasta and sauce are done add the cooked pasta to the sauce. Stir to combine and then EAT!! I love adding parmesan cheese to the top.

Spicy Chicken Tortilla Roll Ups

OMG these are so amazing!!! When I made them I let the mixture sit in the fridge overnight and then the next day I made the roll ups. No matter how you make them they are amazing.

This salad was very delicious! The first batch I made got eaten by my husband within a day. It was really good and I can’t wait to make it again.

Chia Peanut Butter Power Bars

I made these for my Ragnar team to enjoy while we were on our running adventure. I ate a bar before every run. They were so good. I made them for my aunt also. She really loved them.

Chocolate Chip Peanut Butter Banana Bread

These were a pleasant surprise. They are made with oatmeal instead of flour. They were really good. I highly recommend them.

Cauliflower Pizza Crust

This crust was just ok. It had potential to be better though. I think one of the big problems was we did not use the correct pan. It would have been much better with a pizza stone.

Pasta with Herbs

Who knew something so simple could be so good!!! Noodles, olive oil and herbs!!!

Now I’m not going to lie…… that is all I can think of for now 🙂 I did not make it to 8. It was fun though. I really love cooking and I will continue to cook things from pinterest. I really like making recipes once and then trying to make it my own version the second time. I’m trying to make things healthier and change my lifestyle. One month down many more to go….

Now as for my running….. I’m not able to run for a few days because I have a bum toe 🙂 I got ingrown toenails permanently removed on my right big toe. Back in July I got my left big toe done and it is so much better now. Ingrown toenails can be very painful!! So running is on hold for a few days…..
