Great news for you all….. if you love potato soup I have a delicious healthy recipe for you!!!
I have a serious love for potato soup…. so I needed to come up with a healthy version of this delicious soup.
Healthy Potato Soup
2 Cauliflower heads (chopped)
10 small red potatoes (cubed)
1 pkg turkey bacon
1 box reduced sodium chicken stock
4 carrots (peeled & sliced)
3 stalks celery (diced)
1 red onion (diced)
2 tbsp garlic (minced)
1 tbsp olive oil
1 cup unsweetened almond milk
Place the chopped up cauliflower and potatoes into a crockpot (You don’t have to peel the potatoes). In a frying pan on medium heat saute the carrots, celery, onion, garlic and olive oil for about 5 minutes until slightly softened.
Place the veggies into the crockpot with the cauliflower and potatoes. Dump in chicken stock until just covered, I used 1 box.
Cover and cook on high for 3-4 hours or low for 6-8 hours. Once the potatoes are cooked through take out the emersion blender and blend until smooth. If you don’t have an emersion blended you can use a regular blender. Pour in the almond milk and mix together.
On the stove fry the turkey bacon over medium high heat. I actually used venison bacon because I had it but I realize that not everyone has venison bacon laying around so turkey bacon works just as good. Dice up the bacon and add to soup. If you have time let cook longer so flavors will blend together but if you can’t wait you can eat it right away!
I like to top my soup with a little reduced fat colby jack shredded cheese.
