Summer Races 2014

Oh how I love when we just start to get a taste of warmer weather in Minnesota. I don’t know about everyone else but once it starts getting a bit warmer outside I get very motivated to run outside again!

My motivation led me to sign up for a BUNCH of summer runs! I’ve mentioned already that I signed up for runs but I had a lot of interest in what exactly I signed up for so I thought I would share in one post!

My first run that I am signed up for is the Minneapolis Marathon RELAYΒ on June 1st. I am running with my parents and one other person, a team of 4 people.


My next race is the Color Run 5K on July 13. If anyone would like to join me for this run I have a team started: Anytime Anywhere Any Crazy Race, our start time is 8:30am. You can enter promo code color5off for $5 off! Any and all are welcome! I did this run last year with my friend Steph and we had a BLAST!!

I’m also signed up for the Bacon Chase 5K July 19th. I haven’t done this one before but honestly how could it not be awesome! Bacon!! haha Anyways if anyone is interested please sign up and spend the morning running and eating bacon with me πŸ™‚


Next is RAGNAR!!!!!! August 15-16th. I love love love Ragnar and I am so excited for this relay run! Incase you have no idea what Ragnar is about you can check out my blog posts from last years Ragnar: 1, 2, 3 & 4. What an amazing relay this is…. this will be my second year running but my third year participating.


My final race that I am signed up for is the Women Rock Half MarathonΒ on August 30th! I ran this half last summer and I am very excited and nervous to do it again! I was not prepared last summer for this race so I hope to be more prepared this summer. I also hope to be a lot lighter this time around πŸ™‚ If anyone wants to tackle a half marathon this summer I’d love a running buddy!!!


There really is no time like the present to get running!!

Pasta and Women Rock Half Marathon

So friday night was pre race carb night πŸ™‚

I invited my parents over for a delicious dinner. On the menu was Pad Thai, salad (my mom brought) and spring rolls.

I really love spring rolls.



I made veggie spring rolls so they are super healthy and super easy to make. First I chopped up my ingredients.



Then you fill a big bowl full of hot water.


You need the hot water to make the spring roll wrappers bendable. They come in hard sheets.


I bought them in the asian section at CUB foods.

You stick one sheet into the hot water, be careful the spring roll wrappers are very fragile, and let it sit until it is very flimsy.

Once it is ready put in on the counter next to the fillings.


First I put in the cabbage. I just bought coleslaw mix and added rice wine vinegar and a little sesame dressing. You can add whatever you want to the cabbage. You just need to add something to help it wilt a little.


Then I put scallion


Then red pepper


Then shaved carrot. I used a peeler to make think pieces of carrot.


Then mushrooms


Then cucumber


Once all the filling is in you roll it like a burrito.

Then I put them in the fridge and let them sit until it was time to eat. We ate them with a sweet chili dipping sauce that I bought.


They are sooooo good and so healthy!!!


You can have 3 spring roll wrappers for only 80 calories.

Next I made the pad thai.


I got the pad thai ingredients all ready because the cooking process is FAST. Also while I was making the spring rolls the rice noodles were sitting in water. They have to sit in water for at least 45 minutes.

Once the noodles were ready I started cooking. First I cooked the chicken.


When the chicken was done I took it out of the pan and added the veggies.


Then I put the chicken back in and added the noodles. Tossed it all around and then added the pad thai sauce.


Lastly I added peanuts and cilantro to garnish it!!



It was SOOOOO good. I will definitely be buying the pad thai sauce from wild tree again! My parents really loved the dinner!

We enjoyed wine with our dinner.

Then we hung out for a while and called my brother and then they headed home and I got my things ready for the half marathon!

Surprisingly I did not have any problems falling asleep, thanks to the wine πŸ™‚

I woke up at 4:30am and got ready for my morning.

Mom picked me up at 5:30 and we headed downtown St. Paul to park and catch the bus to the start line.

Lots of people… I think there were more then 2000 people in the half marathon.

When it got close to start time I said good luck to my mom and headed back to my pace section.

I’m not going to lie I was really nervous!!!! My goal was to just finish. I really was not prepared for this half marathon. The furthest I ran in training was 8 miles…. not prepared!! So I just wanted to finish.

It was a beautiful morning when we started.

The first 7 miles I felt pretty good. It was really hilly but it was shaded. I made sure to drink at every water spot and to pour water on me to stay cool.

The last 6 miles were along Shepherd Rd. It was mostly down hill….. but…… NO SHADE!!!!!! Since I am not speedy by the time I hit the last 6 miles it was really hot. I’m not going to lie I walked a lot during the last 6 miles. I was so tired and worn out.

Shortly after the 11 mile mark was a sprinkler!!!! SO AMAZING!!!! I was really wishing I could bring that sprinkler with me.

At the sprinkler I met up with another woman who was walking…. we stuck together to get through the last couple miles.

I was really thankful to have her with me…. it was so hot and I really wanted to just STOP.

When I saw the finish line and it wasn’t to far ahead I started running again….. big mistake, I think I started to fast because all the water I drink started moving around in my stomach and I had to pull off to the side…… YUCK!

Luckily no one really saw me, not a ton of people at the finish line anymore, and it was kind of out of view.

I was SOOOOOOOO happy to be done…. I had a terrible time, but to be honest, I don’t really care. It was HOT!!! I finished in 3 hours and 20 minutes…… not so bad for walking a TON in the last 6 miles….

And I paid for running in the sun. I did not eat enough before running and I got over heated during and after and I was sick.

We parked in a parking garage and when we headed back to our car we had the joy of going up 5 flights of stairs…… Well I made it 4 and I had to stop to get rid of all the water I drank after finishing πŸ™‚

Then I felt better and headed to the car. Luckily I had my mom with me so she made sure I made it. It was humid so we were both DRENCHED in sweat….. it felt so good to sit in the air conditioning in the car.

When I got home I took a cold shower and laid down for a little while….. I still didn’t feel good. I had Scott go to the gas station to get me chocolate milk.

If you haven’t heard…. chocolate milk is supposed to be one of the best things for recovery after a run πŸ™‚ YAY!! Love an excuse to drink chocolate milk.

I got sick one last time before drinking the chocolate milk and eating toast.

When I felt slightly better I quickly packed some clothes and we headed to the cabin!!

Lesson learned…… train better and eat more before!!

Any rough runs that you learned something from?
