I can’t believe it is already tuesday! This weekend was filled with moving and cleaning out old apartment!

Honestly it wouldn’t be a treat yourself tuesday without some Advocare love!! I tried this new to me flavor of spark and I am OBSESSED!!!!! If you like lemonade you would LOVE this!!! It tastes identical to regular old lemonade! NOM NOM #advocareobsession

I immediately ordered an canister for the pink lemonade flavor for myself and got my friend, Mellissa to order some also!!!! I can’t wait…. it is supposed to be delivered today!!

I treated myself with two intense workouts! The first was boxing. You all know my obsession LOVE for boxing! Al was our instructor last Thursday night and he was on a mission to make us sweat! Thank goodness…. my goal for that class was to burn more then 800 calories!

Back at the end of March I went to the Lulu Lemon Warehouse sale at the Minneapolis Convention center! OMG what a fun experience. They had great prices and for this first time lulu buyer I was in heaven! I now see what so many people spend the money for lulu…. their clothing quality is amazing! I got 3 pairs of capris, 1 long sleeve shirt, 1 short sleeve shirt, 2 tanks and a hoodie! I saved like 60% and it was amazing!!!

Who says you don’t burn calories in yoga?? I have always LOVED Core Power Yoga but I really love Sculpt with Lee! She does an amazing job at pushing you to do your best and I love her music selections!! If you haven’t checked out her blog yet you really need to! She posts the most amazing recipes ever! And her food photography is amazing! I hope to be as good as her someday 🙂

After sculpt yesterday I was starving and wanted to throw something quick and easy together for lunch! I found tomato basil tortillas, turkey, cheese, pesto, greek yogurt french onion dip, jalapeños, banana peppers, artichokes, olives and kale! Put it all in the wrap and roll it up and it equals amazingness!!!! I love wraps and I’m always looking for new fun things to roll up!

Warm Weather

We finally had some warm weather last week so that meant a walk date with my blend Amanda!! It was so amazing to be outside enjoying the warmth! After my walk with Amanda I ended up going with my mom and the dogs zoey and maisy for another walk!

Oh how I LOVE target!!!! I went to target yesterday for a couple pillows and walked out with pillows and a new purse! I love the mint green obsession this spring! It is a great and happy color!

Making New Friends

As you all know I went to a bootcamp and brunch last Saturday. It was so much fun and so great to meet such amazing people who share similar interests as I do! Thanks again Lee, Amanda and Mellissa for a fun morning!

A Killer Workout

I love trying new workouts and this is the one that Lee had us do for our bootcamp. I really enjoyed the workout. It kept my attention and I was never bored. I’m definitely going to be doing this workout on my cruise! Hopefully I can remember all the moves 🙂

Chia Seed Yogurt

Mellissa’s Chia seed yogurt is so good!! I topped mine with some of Scott’s grandma’s homemade peach jam, blueberries and Muesli. It was so good! I need quick and simple breakfast items otherwise I won’t eat breakfast. I know…. I’m bad! But if I prep quick already made things then I eat breakfast!!

Pei Wei for Lunch

Did I ever mention that in High School I used to work at Pei Wei. Oh man if you haven’t tried Pei Wei you NEED to!!! My favorite is the Pei Wei Spicy with Fried Rice and of course I LOVE the wontons and spring rolls!!!!! Not at all healthy (although you can get healthier options there!!) but so so good. It was the perfect fuel to power me through an afternoon of studying.

I was Reunited with Yoga Sculpt

I took my first sculpt class back in October. I really loved it but my month of yoga was up. On Tuesday I headed back to Core Power Yoga for my second sculpt class. I am SO happy I went! It was such a good workout! I missed yoga 🙂

Bark Box for Maisy

So far we love our bark boxes! Maisy has loved everything she has gotten…. she is pretty easy to please though 🙂 Did you know they make beer for dogs?!?

Maisy really loved it. She really really really loved this box because the toy was a rope toy. If you ever want to win Maisy’s heart bring her a rope toy! You will be her new best friend.

Regions ER

Friday I treated myself to a visit to the ER. I know NOT a real treat 🙂 Friday morning while I was doing BodyAttack I all of a sudden felt some bad chest pain when I would inhale. Not going to lie it felt EXACTLY like when I had my Pulmonary Embolism. Since I had just stopped taking my coumadin 5 days early I was worried. Scott was a trooper and took me to the ER and sat with me during my visit, which took FOREVER!!

Good News: No blood clots for me 🙂 Bad but not really that bad news…. Pleurisy! Pleurisy happens when the lining of your lung gets inflamed, then when I took a breath it would rub… hence the extreme pain. It isn’t really known why pleurisy happens… I guess I’m just lucky 🙂 When I woke up saturday morning I felt 100% better!

Bloggers Bootcamp and Brunch

I was so happy to wake up Saturday morning feeling so much better because I was heading to my FIRST blogger meet up! Luck for me the meet up was right across town so I only had a 10 minute drive, which is good because we got LOTS of snow friday night. The bootcamp and brunch was hosted by Lee and Amanda! Thanks again ladies for an awesome get together! One other blogger was able to make it, Mellissa.

We started off with a bootcamp lead by Lee. Lee played awesome music so I didn’t even notice how hard the workout was. No worries the next day I FELT it!! Oh man my legs were so sore!! Thanks for an awesome workout Lee.

After bootcamp we dug into brunch. We had yummy Chia Seed yogurt with strawberries, blueberries and Seven Sundays Muesli. Seven Sundays was super generous and provided us with boxes of Muesli.

Muesli is like a healthier version of granola. It is very good and it is sold in TARGET now!!!

We also had yummy blueberry waffles prepared by Amanda. Not going to lie there is nothing better then a warm blueberry waffle and to make it even better Amanda bought Archer Farms Raspberry Sauce! YUMMY!!!! It was so good. I love brunch!

Double Shift

After brunch with my new Blends I headed home to get ready for work. The hospital was so crazy busy that I offered to work a double. It is always really hard to stay awake overnight but I was working with AMAZING people so it wasn’t to bad. I worked sat 3pm-7am sunday. Another perk of working overnight, we ordered Pizza Luce 🙂

I got The Wrangler. I have an intense love for BBQ pizza and this is one of the bests I’ve had! So good!! I highly recommend eating at Pizza Luce if you have the chance.

More Work

I also worked Sunday and Monday. Things are very crazy around the hospital right now. So many sick babies! Keep your babies away from people with colds!!!

Interview

Monday morning before work I headed to my first nursing interview. It is for a NICU nurse position which is my dream job!!! I really have a passion for taking care of babies. I think the interview went really well! I will find out next week.

Yoga Sculpt

Earlier today I treated myself to some yoga sculpt. What a good workout!! It was lead by Lee and she is intense. The room is HOT you sweat a TON! We did lots of squats. My butt and legs will be cursing you tomorrow Lee 🙂 Lee teaches at Core Power Yoga and The Shed so if you live in the cities you should definitely check out one of her classes!

Meal Planning Success/ Weekend Update 10/13/13

Good News…. Last weeks meal planning was a success. I made the Chopped Autumn Salad last Sunday evening. It was a huge hit.

Then Monday I made the Ginger Infused Honey Chicken with shredded carrots and brown rice. It was so good I never got a photo.

Then Tuesday I made the Chicken and Gnocchi Soup…. which was amazing!!!!

Wednesday was was Pumpkin Scones. These were only ok…. they turned out pretty dry. They most likely were dry because my oven cooks super fast so I think they over cooked.

Now thursday stole the show….. I made Katie’s  Quesadilla Casserole. Oh My Gosh this was so good!!!! Scott ate almost half the pan in one day. I did tweak the recipe a little to add some extra veggies in that I had.

First I chopped up half an onion and half a red pepper. I put them in a pan on medium heat with olive oil.

Once the onion and pepper were cooked through I added 1lb. of ground beef and 1tbsp on minced garlic. Cook until the ground beef is done. Then I chopped a massive handful of spinach.

I added it to the beef and veggie mixture and cooked it for a minute.

Once the spinach was cooked down I added 1 can of corn, enchilada sauce and tomato sauce.

I also added some oregano, cumin and chili powder. About a tbsp each.

Let it all boil together for a few minutes. In the mean time pre heat the oven to 350.

Now it is time to assemble. Using a 9 by 13 baking pan first spray with cooking spray. Then cover the bottom with some of the beef, veggie and sauce mixture.

Then layer with 3 tortillas. I split them in half.

Cover the tortillas with more beef, veggies and sauce mixture. Then add LOTS of cheese. Enough to cover the sauce and start over. Cover with the last three tortillas then the last of the sauce and cheese.

I used a total of 3 cups of cheese…. I figure I used low carb tortillas and added veggies so I could use extra cheese 🙂 I LOVE cheese!!!!!

Anyways…. now put the casserole into the oven and bake for about 20 minutes, Until the cheese on top is melted and slightly browned.

I enjoyed my casserole with medium taco sauce and sour cream.

This was so delicious!!!!! Both Scott and I really loved it…. I will be making it again!

Friday was more leftovers…. On Friday I went to Yoga Sculpt at CorePower Yoga. OMG it was soooo intense! I really enjoyed it! I will definitely be going to it again.

Then for the rest of the weekend I worked and studied. Not so fun weekend…. but it went by so fast I didn’t even plan meals for this week…. Good news is I have lots of leftovers still.
